Prawn Tortillitas

No, not tortillas. Tortillitas are crisp fritters made with chickpea flour.

PX Espresso Martini

Dark, luxurious, rich, complex - this is like coffee, dessert and digestif all rolled into one.

Huevos Rotos

We had the strangest experience when we visited our egg supplier. We were chatting with the farmer, asking such questions as, 'Can I see what the chickens are fed on?' and, 'How fresh can we expect the eggs to be?' when he unexpectedly opened a side-door in his office, directly on to his barn where lots of chickens were waddling around. He said, 'Put out your hand,' and a hen promptly laid a warm egg into Samuel's palm. Although comical, we found the moment surprisingly touching. Now, with each tortilla we make, we can't help but think of the miracle each egg represents.

Spiced Lamb, Aubergine and Mint

We found this Turkish recipe while watching videos on YouTube. It is an excellent way of learning about real, home-cooked food, and as it is a visual medium it doesn’t matter about the language barrier.

ANCHOVY, EGG AND HARISSA BRIK

North African warka dough is a little fiddly to make but worth it for the delicacy of the pastry. You can use single filo sheets instead, if practice and time are limited.

Rebujito

Every year in Jerez there is a feria, a civic celebration of sherry on a massive scale. Imagine a combination of music festival and village fete at which almost every stall or stage is a sherry bar of one kind or another. This was the setting for Moro's 15th-anniversary staff knees-up and for many of us an unforgettable and intoxicating introduction to the rebujito. It is a fantastic summer drink - cool, refreshing and delicious. At Morito we mix them individually but there is no reason why you can't make up big jugs for a barbecue, picnic or party.

Morito Cookbook

Morito has been serving delicious and innovative tapas and mezze in the heart of London’s Exmouth Market for over three years.

Described by Times critic Giles Coren as “simultaneously supercool and modest, and as much like a brilliant little backstreet place in Spain as you’ll find in this country”, Sam and Sam Clark’s little gem of a tapas bar packs a big culinary punch, attracting critical acclaim and constant queues.

Now, with the publication of its first cookbook, Morito, the tapas bar's small plates can be cooked and eaten at home.

Photographed over the course of two years, often by members of the Morito team, the pages of the book invite you in to celebrate and share the spe
cial character and atmosphere of Morito, which people often say 'hits you like a wall of joy'.

In the words of Sam and Sam, the aim of the Morito cookbook is to inspire you to “cook and eat and wonderful tapas and mezze… The unique atmosphere this brings to the table should be a part of everyone's life. There is something inherently joyful and social about eating in this way. Thousands of possible food combinations lie within this book, none of which is wrong as long as you are happy.”

Morito will be released on 1 May 2014. You can preorder your copy now.

Morito at Wilderness

We're really excited to announce that Morito will join Moro at the this year's Wilderness festival, 7-10 August.  The Morito pop-up will set up shop next to Moro's Souk tent.

Mixing together the absolute cream of the crop in music, food, theatre and the literary arts across four days in August, Wilderness - rightfully hailed as one of the most idyllic, eclectic and gloriously paradisiacal events on the festival calendar - returns to the dazzling environs of Cornbury Park, deep in the heart of Oxfordshire.  Festival tickets are available here.

More details on the Morito pop-up to follow soon.
